Methode Traditionnelle Vermentino & Fiano
This wine of effervescence, of fine bubbles moving harmoniously in the glass expressing perfume, personality and belonging.
This is our second sparkling release where we decided upon a non-vintage style to bring together two varieties refermented in this bottle.
The style is Aperitivo. Upon pouring the bead is small and persistent suggesting freshness and vibrancy. Aromas are bright and suggest mandarin oil, cut grapefruit and finger limes with a hint of zesty lemon pulp with developing background of almond skins and white peach stone notes. The flavours are dominated by ripe citrus marmalade, green melon rind notes that runs through the roof of your mouth with an almond skin texture that appears at the back balanced with elevated pointed acidity and a ripe mineral sea spray finish that leaves your palate revitalised and wanting.
We suggest accompanying this wine parmesan cheese, white anchovies, oysters, grilled seafood, pickled vegetables and a never-ending procession of anti-pasto
And therefore, this is why we grow the grape to make the wine that keeps us happy at our vineyard at Sellicks Hill located at the southern end of McLaren Vale along the coast line of the Gulf of St Vincent.

Alc 11.0% Contains Minimal Sulphites
A creative blend of vermentino and fiano made in the traditional method, with the first fermentation in tank before transfer to wood, where it spent 12 months fattening up. The wine was then bottled, the second fermentation induced. Some toast and marzipan apparent across a rich, frothy palate, following 8 months on lees.
